The thesis shows the general characteristics of the typical, most frequently used production process of the fresh and flavoured cottage cheeses. It discusses the characteristics and at the same time, related to the interaction with environment auxiliary processes of the dairy industry: maintaining cleanliness and refrigeration systems. A detailed analysis of the environmental impact of the production of curd cheese (including the consumption of energy and water, emerging waste water, wastes and by-products) has been done. The first three chapters of the thesis contain, above all, characteristics of the dairy industry in terms of environmental impacts, illustrate the current state of the environment in which the company operates and also describe the Turek company itself. In subsequent chapters, the company impact on the environment has been discussed. The last chapter discusses recommendations for future developments related to the protection of the environment, which are being implemented by the factory as well as the environmental monitoring.
